Understanding the difference between liquid and dry measurements, especially cups, ounces, and fluid ounces, is important to understand when cooking.
As a recipe writer, a common comment I get is something like “Your recipe says to use 6 oz. of fresh chicken spinach (about 4 cups), but that can’t be right because one cup is 8 oz!” Makes sense, ounces and cups are confusing because there are both liquid and dry measurements. It is also quite confusing that there are different units of measurement using the same names!

Use the liquid and dry measuring cups interchangeably because they contain the same amount. However, you will get the best results and the most accurate measurement by using the appropriate cups.
Liquid measuring cups allow you to fill the indicated amount without spilling over the counter. And dry measuring cups let you scrape the excess off the top for more accurate measurements. I recommend that you also have a kitchen scale for more precise baking or when using European baking recipes that measure ingredients in grams.
Dry measuring cups are usually metal or plastic and come in a set with different cup sizes from 1 cup to 1/8 cup. Liquid measuring cups are usually a single glass or plastic container with markings indicating different amounts, from cups to ounces.
