For a long time, people thought that carbohydrate counting was unnecessary for people with type 2 diabetes, but that view is changing.
If you have a certain number of carbs to eat at each meal or snack, determining the right amount of carbs will help keep your numbers in your target range.

At first, carbohydrate counting is difficult. Many foods and meals are difficult to visualize and official serving sizes have nothing to do with the portions we see. We are surprised how many “healthy” foods are rich in carbohydrates and how many “bad” foods are not.

For those living with diabetes, carbohydrate counting is an important part of managing blood sugar levels. Food labels should have a separate page for the carbohydrate section. There is no set rule for how many carbohydrates people with diabetes should eat. I think back to one Thanksgiving a few years ago. A large table full of cakes, sweets, sweets and cookies – from the dream of Willy Wonka. The smell alone made my mouth water.
Next to that table was a small table with sugar-free apple pie, cookies, and gummy bears, just for me. Despite being so thoughtful and careful about my diabetes, YUCK! I choked on a dry cookie and watched the others enjoy their desserts. As a tribute, I ate a few gummy bears until I got home to prevent alcohol-induced cancer.
It’s been more than a decade since experts said sugar is not our enemy. So why don’t people believe it?
Most people don’t know that sugar-free foods contain carbohydrates. It doesn’t matter where the carbs come from. If you are on an insulin pump, you adjust your insulin to the amount of carbohydrates you eat. But if we change our lifestyle with food, we can change insulin to improve the situation.
Sample Low Fat 1,200 Calorie Diabetes Diet Meal Plan
For example, a chocolate chip cookie contains 26 grams of carbohydrates. A sugar-free cookie is equal to 20 grams. A regular apple pie has about 40 grams of carbs per serving, while the sugar-free version has 37. A slice of yellow cake with frosting has 40 grams, and the sugar-free version still has about 28 grams of carbs. Sugar-free foods are not free foods.
Why? There are many sources of carbohydrates, not just sugar. Sugar alcohols (mostly those ending in -tol, such as malitol, xylitol, and sorbitol) have fewer calories than sugar, but are often not as sweet. It is more important to taste it so that the carbon number is the same as table sugar. And there are many carb-free sugar substitutes that can’t be used in food. Higher carbon variants are used.
No matter what you eat, remember that it’s not the amount of sugar or where the carbohydrates come from that causes your blood sugar to spike. The only thing is lots of carbs. (Although the source of carbohydrates can affect how quickly blood sugar rises.)

Remember that the source of carbohydrates has nothing to do with your blood sugar, but it does affect the rest of your body. Carbohydrates, like everything else you eat, should come from a variety of foods. One cannot live on cookies alone. Carbohydrates from whole grains, beans, eggs and dairy products provide more nutrients, vitamins and minerals. Anyone with or without diabetes should follow this rule.
